Chickpea Sausage Pizza

Chickpeas are packed with protein, iron and are gluten-free. Great for soups and stews, they are an excellent protein substitute for sausage. With a few simple ingredients, you can turn a simple can of beans into a culinary delight. For this recipe, I've purchased all the essential ingredients from my local Dollar Tree for $5.09. Spices, seasonings, and oils are items you may already have in your food pantry. So grab your measuring spoons pans and crank up the oven, and let's get cooking!



Ingredients 4 Servings


1 c Chickpea Sausage

1 c Sun-dried tomato sauce

1 pkg Ultra Thin Pizza Crust

1 c T.J. Farms Pepper Stir Fry

1/2 T Garlic powder

2 T Canola oil or olive oil [additional oil as needed]

1 t Dried basil

1t Dried oregano

1/2 t Red pepper chili flake [optional]



Preparation

  1. Pre heat oven to 400 degrees

  2. Measure all ingredients

  3. Place a medium non stick sauce pan over medium heat and all 2 T oil

  4. Add pepper stir fry and sauté until peppers until they begin to char and onions become golden brown. Season with basil, garlic, oregano, chili flake, salt and pepper to taste. 5-7 minutes set aside

Assembly


  1. On a lined sheet pan, place pizza crust and brush lightly with oil

  2. Top crust with sun dried tomato sauce, stir fried peppers, and chickpea sausage

  3. Drizzle with oil and place in center of oven

  4. Bake for 10-12 minutes until crust is lightly golden

  5. Let stand for 3 minutes, slice and serve with green salad to complete the meal.
